About This Position The Bakery Production Manager reports directly to the Inventory Production Manager and serves as a liaison between onsite production teams and site leadership for all bakery needs for the operation. Manages an inventory tracking system to record deliveries, shipments and stock levels. Responsible for maintaining accurate inventory levels to improve inventory control procedures for assigned kitchens (production areas). Provide guidance, work closely with food production teams assigned to the shift to ensure efficient production, product quality, and recipe compliance. Analyzes daily product and supply levels to anticipate inventory problems and shortages. Essential Functions, Duties, and Responsibilities Accurately and efficiently prepares a variety of baked good items in accordance with assigned work instructions and menus. Refers to Daily Prep List and devise baked goods production schedules for each shift and delegate assigned duties. Knows and complies consistently with standard portion sizes, baking methods, quality standards and kitchen rules, recipe compliance, policies and procedures. Handles, stores, labels, and rotates all products properly for best quality, freshness, and in accordance to applicable state laws. Follows assigned instruction to properly stock and maintain sufficient levels of food products at line stations to assure smooth serving of food. Adjust manpower according to changes on production schedules, equipment availability, and variance in forecast volume. Manage all aspects of tracking & reporting inventory, quality control process for inventory accuracy and on hand, inventory analysis, and waste control management. Provide appropriate training for employees to perform their assigned position. Collaborate with onsite production & site leadership to ensure production is coordinated to optimize quality production and provide daily variance reports. At end of day ensure all rooms are stocked with the correct raw materials for next shift and rooms are cleaned correctly. Perform other duties as assigned. What You\'ll Need Associated degree (B. A.) or certification; or three to five years related supervisory experience and/or training; or equivalent combination of education and experience in food and large scale bakery production, preparation, or related fields.
